The full maturity of this cheese develop after 12 weeks. It has a delicate, mild and slightly tangy taste. The production of this cheese began 1968 in Easter part of Poland called Podlasie, commonly known as Green Lounges of Poland. Podlaski cheese is still produced following the same recipe. Traditionally served with bread and fresh fruit.
