In Poland, head cheese is referred to as salceson, a name derived from saucisson, the French word for a type of sausage. Head chese has the same number of fans as opponents. It is associated with very exquisite cuisine of the Polish Republic but it is really worth to try and appreciate. Let yourself be tempted. Black head cheese contains delicate pieces of meat, spieces like garlic, pepper, cumin and majoran and little of pork blood like in Kiszka.
